If you would translate that directly someone could say "controlled fight ". That's a little bit ambiguous mode of expression.

Exactly! That expression is a little bit to hard, isn't it?!

.But if you permit - therefore we have the modern methods for wine treatment today!

Winegrower in general avails themselfs from the pleasant pallet of ours
invention-rich chemical industry. There is nothing at all to retort - if you are hundred percent shure, how this effects to your environment.
There is weed killer, pesticide and means against fungal attack. The operating instruction is relatively simple: in even intervals you have to treat the wine and its environment with the suitable means. These means possess special adhesion characteristics, so that even with rain the protection can be ensured e.g. against fungal attack.
Disadvantage: briefly before the harvest the wine may not be treated any longer - however - what is if someone has fear to lose its whole harvest because of fungal attack at the end? Then the wine finally gets an extra charge - and not too little.
And the whole good means move off into the wine.

That's right - but the producer is forced to treat his wine because if not he won't get the right quality!

There are othere possibilities to reach that scope. If yo are willed to put in a little bit more effords and you have a good knowledge of biology and chemistry, you can discover still another method:
In 1850 in Europe appeared a fungus called "Oidiu" which attacks the grapewine and destroyed a lots of wine therefore. Only several years after the appearance of that fungus there was found a treatment with Sulfur which stopped the Oidiu. So in that times when farmers had fewer aids than today, they relied rather on their observation gift. Thus they found that the fungal attack begins only with a certain air humidity and weather constellation. This could be prevented with the treatment by a solution with copper and sulfur.

O.k. but there is still the item that Sulfur has even not a really wealthy influence to our health.

That is a very good objection. There are indications where SO2 contents causes an allergic reaction to some people. But besides copper, sulfur is here absolutely innocuous with the moderate application - Sulfur is absolutley neccessary while the production period - in the wine cellar you even need a minimum quantity, in order to control the fermentation process and to freshen (oxidation of some bacteria which has a bad influence to the fermentation) the wine.
Emh... there remains a small problem, why this procedure with copper and sulfur is not so popular: You have to treat rapidly the wine in time before dampness period - and however start after the next rain again from the beginning, since everything is again washed off.

Incredible - no one can pay the expenditure.
